When Fiki arrived home from work, the first thing he said was…. “What’s that smell?! When the elevator door opened, it smelled of feet!” And when I opened the front door, the smell was coming from the house!!” 😳
Hahaha!! Well that’s because of the cheese!! I made some Roast Beef and I baked some baby potatoes and topped them with cheese. I saw this small piece of cheese in the fridge and it’s a Raclette…. 😊
The beef was part of the steak I bought for our Japanese night with the Sacro’s. I tied the beef using cotton twine in about 3-inch intervals. I rubbed some salt and pepper, seared it in a pan with very little oil with some fresh thyme and garlic before putting it on a pan with rack and some water underneath. I baked it for 30 minutes.
Since I was doing some chores while baking it, I forgot to check on it before the time ended. It was way after 30min when I remembered I was cooking something, so I assumed that it was overcooked because it stayed in the oven even after it automatically turned off.
I took it out and let it rest before slicing.
I turned on the oven again, baked the potatoes and when the potatoes were tender, I topped them with the cheese and put it back in the oven to melt the cheese.
I used the drippings to make the gravy. I made a roux by mixing butter and flour, added the drippings and some water (or broth). I added some liquid seasoning and some salt and pepper.
When I sliced the beef, it was still tender. (Yey!)
After the potatoes, I made some garlic toasts. I cut the baguette in 1/2inch slices, brushed one side of the slice with melted butter with garlic then put them on a tray and baked it for a few minutes, until it was golden brown and crunchy.
